BRAZILIAN COCONUT CAKE Decorating Tutorial shares a very nice Brazilian coconut cake recipe and then shows how I decorated it. This isn't a cake that is normally covered in fondant, but anything is possible with the right approach!
Ingredients
2 tablespoons unsalted butter, softened
4 eggs
8 ounces (250 milliliters) milk, room temperature
1 cup (200 grams) sugar
2 tablespoons shredded coconut
Pinch of salt
2 cups (150 grams) all-purpose flour, sifted
1 teaspoon vanilla extract
1 tablespoon baking powder
Sauce
1 cup (100 grams) shredded coconut, plus more to garnish
1 (14-ounce/397 grams) can sweetened condensed milk
12 ounces (375 milliliters) coconut milk

In this cake decorating video class I use edible gum paste, but sugar paste, modeling paste, or even fondant can sometimes be used. Everything is done right in my own kitchen, with just a handful of basic tools.
